Santa Isabel is a fifth-generation, 300-hectare family estate founded in 1875 in Alta Verapaz, Guatemala, at 1,400 to 1,600 metres above sea level. The region’s cool, wet climate brings a slowing of cherry maturation, and staggered flowering across a long harvest from November to May. Coffee is grown on 200 hectares under native Inga shade, with a further 88 hectares preserved as natural forest reserve.
Now managed by Luis “Wicho” Valdés, the estate has been reducing its chemical inputs since 2021 and no longer uses pesticides.
This Caturra lot is processed at the estate’s own wet mill, where cherries are sorted by density, pulped the same day, and fermented for up to 17 hours before being washed and dried slowly, first in the sun and then in a greenhouse on raised beds.
In the cup, this coffee tastes like dried apricot and hazelnut, with a maple syrup like sweetness.
We roast every Wednesday and ship every Thursday.
